I am thinking of ordering the Mavic Pro to take some skiing videos. However, before I order I want to be sure if it will do the job considering the Specs list the Operating Temp. to be 34F to 104F. Temps at the elevations I ski (7 - 10,000 ft.) are usually in the 20's so I am not sure if it will work!

The elevation is not a problem, that is outside the operating range of the temperature. Many people have flown in colder than the spec without issue BUT you must warm the battery up to flight temperature first.
BUT, if there is a crash, you would be flying outside of the specs to take that into consideration as it's not recommended and may not be covered under warranty.

For what it is worth, I will be taking mine skiing. Probably not on real stormy cold days, but on good weather days I will carry the battery inside my jacket to keep it warm, use my pack as a heli-pad for take offs and landings or learn to grab it in the air like I have seen in so many of the review videos.
