According to the specs, I can change my video settings to .MOV file and a compression of H.265.But for some reason, I cannot find where to change these settings. Hopefully it's just user error and not a firmware update has yet to land.

Please let me know if anyone has had had success in finding these two camera preferences.

So I now have the answer.
Normal color profile is H.264 and DLog-M is H.265.

Hi there. DJI Goggles 3 supports H.264(CBR) and H.265(CBR) in Normal and H.265(CBR) in Dlog-M, 4K, and 4:3. There is no independent option to switch the video format H.264/H.265 in the goggles. Have a nice day.
