Hello

According to the user manual, the batteries should be stored at ~60% charge and should be recharged at least once every 3 months.
If they have been activated for about 5-6 months and have never been recharged, what is the risk that they are affected? Is there any way I can check their health?

This battery maintenance recommendations is for extend the battery's lifespan. However, there isn't a direct way to check the battery health however, you can try charge the battery and check if you encounter any errors.

Just to be sure that I got it right: if the battery was not discharged to 0% or very close to this during all this time, then should not be a problem. Also, the battery is either damaged or not damaged, it is not loosing capacity like Ni-Cd batteries. Is this assumption correct?
Moreover, if the battery can be charged at 100%,  is safe to assume that it is ok? Should I understand that an error represents a stop in the charging process and so I don't have to be watching the battery the entire time of charging and I can consider that it is ok if it gets fully charged?

You can find many generic lipo battery knowledge on the net (such as Oscar Liang web, or Joshua Bardwell Youtube).
The absolute rules are, don't charge over 100% (4.2V for Lipo, 4.35V for LiHV), and don't discharge below 0% (3.0-3.4V, depends on aircraft).
But DJI batteries are intelligent (that includes the charger/discharger).  You don't have to worry about over charge, and leaving after a week, it starts discharging until 50%.
Lipo itself discharges naturally very slightly, and from my experience, 50% charged battery never discharges to 0% even after three years.  I don't know about intelligent battery (the charge/discharge controller inside the battery unit consumes little current), so maybe 3 month is recommended - but 1 year after, Mavic battery was not under 25%.  :-)

I think DJI battery has two points to care:  one is generic to R/C plane or car battery - during the summer, 100% charged battery in the cool (maybe 25oC) room sometimes becomes "overcharged" situation under the sun (over 40oC), by its physics.
Another point is, Goggles (1) battery or controller (RC 1 and FPV 1) seems not to have "discharge after a week" function.  Don't leave few month after 100% charge (esp. in summer).
