Size is one thing. Output resolution is another.
As you mentioned it, your images are 4000x3000 pixels : this is the size.
The 72dpi resolution encapsulated in the files indicates that if you print them, by default the print size will be 72 dpi, resulting in a 55" x 42" print.
Anyway, in any decent image management software, you can choose the size of your print (usually the size of the paper you use). For example if you have A4 paper and print borderless, the dpi value will be approximately 342 dpi. In the print dialog box, changin the paper size will change the dpi value accordingly.
Don't worry about this value : it is just the relation between the original file size (in pixels) and the final output (usually paper).
Grabbing stills from a video will not give you more resolution or size as it was mentioned by the DJI guy here (I don't call 96 pixels more horizontally a better resolution) !
