When you are flying via RC mode can you spontainiously start using the gestures to control the drone without pushing any additional buttons or do you have to somehow switch it to "gesture mode"?

First you really should read the manual all the information is there.

You first have to activate gesture control by bringing aircraft close to you for face recognition 0.7 meter hand up and wait for proper signal lights and then you can do hand gestures, you cannot just start waving while using RC so if this was what you were thinking answer is no.
You can also cancel out of gesture without landing again I will let you read the manual to figure that out.

I think in no time you will have all figured out.
