     Point of Interest is also one of my favorite flight modes except that not everyone has noticed that if you rotate the camera up and across the orbit, you can get a really good PAN clip that is as fully controllable as the POI.  Most of the Flight Modes also allow you to make rotational changes and altitude changes to get the shot you want, but rehearsal and practice will always be the determining factor.  Each of the techniques you demonstrate can use a plurality of Flight Modes for execution.  We fly some amazing birds.

     I have attached images from a tried and true thread about videography from a much earlier Forum entry that is still very useful.  Hope this helps!
