I am going on a trip this December and wanted to bring my Mavic with I am going to Amsterdam and want to take some nice footage with my Mavic, what us the rules and regulations for Amsterdam?

According to the Ministerie van Infrastructuur en Milieu it's not allowed to fly there. Altough I found that these restrictions aren't the same as DJI's NFZ map. I think the NFZ from the Ministerie van Infrastructuur en Milieu is meant for migger drones.

Mavic should be fine. It's still not allowed to fly above buildings, roads, railways, powerlines etc. Check this page from the Reiksoverheid for more information on Dutch drone regulations.
