I have plenty of open snow drifts I can launch other people's drones out of.  Not mine.  Or on warmer months, plenty of grass.  Acres even if the grass can be long or piled with horse manure (squishy landing).  My spark doesn't touch the ground.  I have a table on my deck that I thought of using but it is mostly metal.  

I have seen Casey N's videos of launching P4P's from tops of rocks.  But I have also seen him roll the P4P off the rock and into the water.

Honestly never had an issue finding a place to launch or land.  Takes less than 2 square feet.  One shovel scoop, a landing pad, a piece of cardbord, or just a crushed cereal box & you're good to go.  I generally sit the drone outside my vehicle, climb back inside, & do my entire flight from the climate-controlled comfort of my truck.

This winter, I launched mine from the back deck attached to our kitchen. I have to go straight up to navigate away from a multitude of old tall trees in our neighborhood. Once this is done, I have clear sailing at 100 feet.
Coming home is a little trickier and all you need is a little patience and confidence. I have only used RTH on one occasion when the winds got kind of high and seemed to be blowing the drone away. But, when I picked it up with VLOS, cancelled RTH and brought it in with the sticks.
My wife thinks I am nuts for doing this ......lol
But, I like the challenge and gives me great practice.

I did remove the top board from one of my work stands to use as a landing pad for the Spark when I first got the drone.  I would set it in the grass in the field.  But carrying the table top around is inconvenient so now I just hand launch and land.  I have looked at the fold out circular helipad on Amazon for drones, and might get one if I get a bigger drone.

Two things become apparent.  Why people don't understand how I just fly the Spark within eyesight, and normally closer, but still get shots of my Subject.  They must think I just fly around my car.  Nope, I am in the field, hip deep in grass, brush, or snow, and hand launching/landing by the thing/horse/dead tree I want to video.  Five minute flight near me and done.  I fly RC model aircraft so by instinct I need to be by the radio control aircraft to ensure a good safe flight.

If you are sitting in a car, launching from the parking space next to you, the drone would need a long range communication to fly the two kilometers to the dead tree you want to video.  And it would need a 30 minute flight time.  RTH would be essential.

Yep. not a problem at all on the deck and I have all of the things you mentioned, plus one of those tall propane deck heaters. I do religiously do a compass calibration before each launch (even after battery swaps) and make sure I have plenty of satellites. Usually have a minimum of fourteen.

I do lay a towel down for a nice soft landing pad. I have launched my Spark, Mavic Pro, and an Autel Robotics - X-Star Premium (Phantom 3 Clone) with no problems whatsoever.
If you do a compass calibration each time, you will not get a good one and it will let you know if there is magnetic interference going on.

Give it a try and I'm sure you will have success.
Oh, I do not keep my cell phone anywhere around also. Even the home wifi gets picked up on the deck and has never affected any of the drones.

How do you like flying your Mavic, compared to the Phantom line?

I love flying my Mavic Pro but also like flying my Spark too. I believe each drone has it's own little niche that you like to use it for. That is why I could not see myself getting a Mavic Air.
I think my next purchase will be a Phantom4 Pro Obsidian or possibly a Mavic Pro 2.

But, I can easily see you getting an Inspire 2 or Inspire 3 in the future. and stepping up your great videos. Happy Flying and making those cool videos !!!!

Thanks.  I love my Mavic Pros & they get the best RC range of all my birds.  My Phantoms have the edge in battery range & handling strong winds.  My P4 with high-capacity battery wins in overall battery range & can perform missions of 60,000' in the proper conditions.  The Mavic Pro is awesome for portability.  

I know the Air is even smaller & lighter than the Pro, but it also has considerably less flight time & RC range.  I had a P4P but never activated it & sold it when the P4 Obsidian was released as I prefer the black bird.  I bought two Mavic Pros & both Goggles since so I still haven't picked up an Obsidian yet.  I'll probably skip the Air as it would be a backwards move for me.  I imagine my next bird to be an Obsidian, P5, or Mavic Pro II depending on what that latter two offer.

Because drone pilots love to fly over and eventually crash into water.  Then they say it is unrecoverable and expect DJI to give them a new one.

I have the Getterback but as I video Kayaks and Sailboats frequently I purchased the Red pool noodle type floats that look a bit gimmicky but when considered have their uses.
I don't want to land on water but a few times I have almost kissed it in the old days with wide angle lenses that made height difficult to judge.
If you had the Floats you may survive a kiss, but the real reason is to make the totally splashed Pro easy to recover for DJI Care.
Why not just use the Getterback? Because it can only be used once and costs $USD35 and the Floats are only $20 and is a lot easier to see and retrieve than a Yellow lipstick sized tube.
Yes, yes, the Floats create extra drag and in gusty wind may cause some movement but I would not be flying in those conditions anyway.
$20 and you're pretty Drone does not become a Submarine.

REALLY hoping for a better image sensor and most importantly VARIABLE APERTURE!

If everything else stayed the same and they just upgraded the camera I'd buy it in a second, but front and rear obstacle avoidance would be nice.
