Has DJI ever done anything like was done with the massive drone displays at the Olympics?

Not that I am aware of.

Intel is doing a lot of such project

You cannot really compare Intel to DJI in any way possible.
DJI birds have problems with random interference with a router or two....
Intel is able to communicate/coordinate interference free with hundreds in the air.

I heard DJI put a no-fly zone at the Olympics. Turned the area into a temporary airport.
