Yes, the need to mess around with ND filters would be reduced if the camera had an adjustable aperture.
On the other hand, with a small aperture, the light diffraction in the lens would increase, so maybe it is not a solid alternative to ND-filters.

Looks to me that the Phantom has a greater "depth of field". The fence in the background is in focus for the phantom while the GoPro is not.
