Hello,
I am a relatively new pilot of a Mavic air, however, I think I have a close idea of how the POI works. Ideally, what you'll want to do is to hover above the cross there, in this instance so that it is in the center of your frame. Then, move a few inches forward, so that roughly the center aligns with the centerline of the object. In my experience, this helps keep a pretty consistent POI going, though keep an eye on the camera view as in windy conditions, the drone could easily turn slightly off center. As far as some of the motions in the video, try things like cinematic mode/tripod, and find a good setting for your gimbal that allows it to move quickly if needed, but wont jerk to a stop if you let go. At that point, just remember to ease all of the inputs and you should have some buttery smooth footage.
If any more experienced pilots note any errors in what I have said, feel free to correct me since I am very new with about 25-30 flights in total with this AC.
