MAVIC PRO - Is the a flight mode where I can lock camera on a subject while using joysticks for altitude and distance away from the subject.

Yeah you can use active track, to keep the subject on focus while you can use your joystick to control the aircraft with camera facing the subject.

It does NOT work the same as on the Osmo Mobile unfortunately. Where you can just walk around and the gimbal will keep the subject centered.
