Is it possible to turn on left and right vision  system during a normal flight?! It says only at “active track mode”. But I would love to have this security also when I fly manually

No, the Mavic 2 platform only turns on the side sensors in specific modes.  Originally it was just active track and tripod mode.  With the 0100 firmware, they also added some of the quickshot modes (Circle, Helix, and Boomerang) as well.  

You can activate active track and then just fly normally, that way the side sensors will be active during your flight, but the speed is compromised.
