Is there a way to reconfigure the left control stick to fly DOWN when pushed forward and UP when pulled back? The current options are the opposite of every aircraft.

yes, I believe you can go to the RC settings and choose several ways or customize your own.  Check out the video I found.

I overlooked the "Custom Setting". I think that's what I need.

On the DJI Go 4 app, there will be a customizable button that you could use, however, the up and down movement or left and right movement will automatically sync upon assigning it to the preferred sticks that I'm afraid that it cannot change the functionality in a reverse way.
