I think they have to crop the slow-mo footage to reduce shake that can be more detectable between frames when recording higher speed video which is then played back at a much slower speed. Gimbal movement alone would be tuned for normal footage. I'm not totally convinced that there isn't some additional electronic image stabilisation going on as well which would explain the crop more.

If they do any electronic stabilization, they are doing a good job. I have not seen any artifacts normally associated with it.

The crop allows for the image to be continuously cropped as it moves across the sensor to keep it centralised and reduce movement. At 1080p there should be enough spare photosites so as to not have to show any appreciable visual degradation in the image because of the crop.

No sensor line reading, as for the file splitting that’s another archaic file system phenomenon that goes back to the fat or fat32 file system where a single file cannot be greater than 4gb, exfat was created to impart get around this very issue (amongst other) but camera manufacturers fail to recode the software to accommodate.
