So the funny thing is, he had to bundle up the Sony with this big stabilizer for the A7iii to compete. Just as a reference, I too have the A7iii, so no bone to pick with either camera. I can only imagine what this A/B would have looked like had he NOT attached a stabilizer to the Sony! The other thing I noticed is that his OP has a pinkish cast that I've never seen on mine in any kind of lighting. If the color was neutral like mine (I find the color on the OP is great), the A/B would have been even closer.
Now obviously I'm not saying the OP has better PQ than the Sony. I'll still reach for my A7iii when I need to do something critical, but when you consider the size of the OP, it's truly amazing we can even look at these A/Bs and realize the OP has nothing to be ashamed of.
I had done an A/B with my wife's Sony RX100 VI (a 1" chip), and actually found I preferred the OP picture to the RX. Although the RX was a bit more detailed and had somewhat better DR, I found the color was better on the OP as was obviously the stability of the picture. Interestingly the difference in detail could not be detected on my 77" TV from a normal seating distance. Only when I went up to the screen could I see the resolution advantage of the RX. But the color and stability of the picture was obviously visible from any distance.
