What are the best settings for parallax shots, rotating 360 degrees around a subject while keeping them perfectly centered?

"All Lock"
You mean Sport Mode?

I find Sport mode too sensitive for rotating shots around a subject.

Hi sky_makai, when you said Parallax, I thought you meant Zoom In/Out your physical position towards your object in a straight line, and you counteract that with a digital zoom in the opposite direction, hence Full Lock. That's what I was referring to.
The other move, 'Orbit', is quite a bit more difficult. I am still trying to find good settings, currently playing with these ones:
SmoothTrack (definitely NOT Sports Mode) Pan Speed 20, Deadband 0, Sensitivity 10.
PAN Stiffness ~60, Strength ~50
which seem to suit my payload better (A7iii/cage/Tamron2875)
a bit violent at times, but gives me better responsive control and less 'slop' ..
