Sometimes people overexpose their shots and it seems the saturation/vividness is not good. While setting exposure, it is always better to use the histogram and make sure that the curve is not tending towards the highlights or white side. Apart from that, there is no shooting mode or saturation/vividness adjustment on the Spark. It is left to the user to make color corrections in post processing.
Are you talking about photos or videos ? With photos, I never increase saturation but I do bump up luminous. Bring down highlights and bump up shadows. I use Lightroom for photos. For video I use da Vinci resolve It’s all about color grading in video Lots of YouTube videos to show you how.
A polarizing filter is supposed to enhance the colour a bit. I haven't tried one with the Spark yet (it's on order), but the one on my old film camera worked well for that.
