I was wandering if it its possible to change the movement-speed of the gimbal-control if drone is in Tripod-Mode?

I don't think that there is a setting specific for tripod mode, but you can change it globally, under 'Gimbal Settings' / 'Advanced Settings'
There you can adjust the 'Max Gimbal Pitch Speed' and 'Gimbal Pitch Smoothness'
