How many stops you lose with None instead of D-Log/HLG?
I can only estimate approx. 4 stops.

It's very very hard to get the color spectrum to be as wide in any mode other than None.  Sure you get the dynamic range of the brights to the blacks, but the color spectrum is worse.  Perhaps with some extreme mask tracking to bring the right colors out, it's better, but that amount of work is monumental compared to just shooting in none.

The RED cameras provide a better IQ (Image Quality) of course than the X7, but what measurement testing system dilutes the real difference?

No, it's not hard. All you need is to know what knobs to turn. And no, RED cameras do not necessary provide better than X7 image quality. Perhaps a notch or two better dynamic range, which shines in cinematic projects.
