For those of you that have already received your MM are most of you hand taking off and hand catching to land?
Being that there are no sensors on the bottom I would assume this would be an easy feat?

There are sensors on the bottom.

I generally take off from on top of my case. Landing is in my hand.

You are correct two of them. I don't think they will come into play if hand catching?

Hand catching reacts exactly as my Mavic Air did. It pauses when it 'sees' my hand, but I hold the stick down and it descends gently to my palm.

I think so.
They are for landing.

Billy Kyle on his youtube said his was moving out the way of his hand when trying, but iJustine was doing it fine and flipping it upside to power off the motors
