How can I downgrade my Phantom 4 Pro V2.0 with the last firmware version 01.00.50.00 to an older version? DJI Assistant and DJI GO App do not offer this option.

DJI Assistant and DJI GO App do not offer this option. Im afraid, P4P V2 with latest firmware is not possible to downgrade.  P4P V1 is possible, but V2 not.

Following an update,  Calibrating your IMU as well as Compass would be a normal process.

This may help with your stability and straight line flying.......
