So  I was pulling photos off the storage card for my new Mavic Mini, when I  noticed that there is a "Linux" log file on the storage card ("linux_log.log")... Being a Linux user exclusively, this caught my eye the moment I spotted it.

Do some or all of DJI's drones use a Linux-based operating system?

I believe it's busybox which is very common in embedded applications

Actually, BusyBox is just a software suite that runs under a variety of environments (including Linux-based operating systems), however that link you provided (nice find!) clearly states that they're using a Linux-based operating system on all of their products...

Yes you're quite right, but it was the only open source software referenced for the Mavic. For an educated guess I know DJI uses the Myriad VPU and Intel supports the OpenVino SDK which in turn uses Ubuntu, CentOS & Yocto that helps build a custom Linux, which in turn is what DJI uses I think.
