Can someone tell me if I were to land a m2p say 2 miles or so from a take off point with hill's and trees between the two, kill the motors but keep the connection between the quad and the RC & video device intact, would I be able to take off again and bring it back manually if not by RTH?  Hypothetically speaking of course. Thanks for any answers.

You would be very hard pressed to still have a controller to aircraft link alive over a 2 mile part with trees and hills in the way!  However, assuming you still had the RF link, I would think you could.  I would think that would be no different than doing the same thing your front yard to your back yard - might be a safer test.
