I just bought an Osmo Mobile 3 and for the most part it is working great. However, there seems to be a bug in the iOS software since I am unable to change the white balance settings in Video or Photo mode on my iPhone 11. It is adjustable in other shooting modes as you can see from the screenshots as well. Is anyone else noticing this behavior?

A design deficiency of the app.  Apparently you cannot lock/adjust white balance.  Hopefully the design people are working on a firmware upgrade.
