It may not be news about the "hidden" update in the latest version 1.1.8 (Android) and 1.1.9 (iOS) that does not appear in the release notes for the respective platforms. I did a test to check how it works and I will present some screens (they are originally in the Brazilian Portuguese language).
DJI included a feature in the last update: Local Data Mode. which disables access to DJI's network. To enter this mode, it is necessary to have the drone on, connected to the radio and by DJI Fly go to the user's profile page:

Then, you will find in the top right the option "Data Mode"

After enabling this option, you must agree to the following pop message:

... All data communication between DJI and the app will be disabled which will result in the unavailability of the following functions:
- Firmware updates
- Flight safety database update
- Flight data synchronization
- Real-time flight safety updates
- Access to web pages of third party services (such as AirData)
- Flight map accessAnd in the end asks to fly carefully, which in other words means: "You can fly, but we will not be responsible for failures caused by the lack of information that we fail to provide"

The following popup message will appear:

...and next:

... you will need to close the application manually.

Testing offline mode:
When opening the DJI Fly, nothing new, connects to the drone normally but the moment we touch the map, the message appears:

It is then confirmed that data that is exchanged between DJI and DJI Fly is disabled. By not opening the map, it is possible to fly normally, if you are following the rules flying in VLOS, but there are situations that, for example, the Mavic Mini is very small and being a little more than 100 meters you cannot see it, something that with the map could help a lot.

"Recommended zones" and "popular areas" do not work either:

Remembering that you can when you want to return to "online mode" at any time: just disable "Local Data Mode" and in this case, you will not even need to restart the application and if you flew offline, you can synchronize your flight data so that they appear in the log from the DJI Fly app (and also on Air Data), just upload them manually.

Conclusion:
In my opinion (I may be wrong) it may be a well-intentioned response to criticism by the US government about spying on products from China, and its "made in USA" competitor. This time, the Chinese manufacturer decided to implement the offline mode as they already exist in the enterprise versions of its products, now in its consumer drones. Which may be good for some, but it opens loopholes for malicious pilots who complained so much about not being able to take off in flight restriction zones (NFZ) to be able to fly without the DJI Fly app alert and online confirmation that they are flying in a restricted area. .
Now let's wait and test the maturity of the drone pilots.
