On the Mavic Air 2 there is an M.M value displayed next to the camera settings. What exactly is this and how is it used? Thanks!

Hello there invictus. Thank you for reaching out and for the inquiry. As JJB* posted on post #2 it is the Manual Metering if the DJI Fly application. It is the measurement of the exposure value when setting the ISO and shutter speed in manual settings. Minus ( - ) means it is under exposed and Plus ( + )  means it is overexposed. Thank you.

With peanuts?

Manually touch the screen when in auto settings and the camera will shift the exposure to compensate for that precise point highlighted with a yellow circle. You can alter the EV manually then lock it in thus mixing auto settings with manual metering.

We sometimes mix a big bowl of the 3 kinds and have M&M fest.

You have that mixed up.
In auto mode, the exposure isn't locked and the camera's metering will change the exposure to suit the scene and lighting conditions.
In Manual mode, you have set the exposure and it won't change unless you change the shutter speed or ISO.

I have the same question as the originator of this thread.  When I have the camera in "pro" mode and I adjust the ISO and the shutter speed, the MM value stays at -3.0 and it is grayed out.  After reading all the answers, I can't figure out what changes the MM.

When you get to -3.0 that's as far as the MM meter goes...gray probably means the setting you've selected is past the -3.0.

That's telling you that your camera settings are 3 or more stops underexposed for the available light.
Adjust your camera settings to give proper exposure or take your camera outside in daylight where there is more light.
