I've tried the 360 pano phot mode yesterday with my new mini 2, but when I came to download the photo it was just a series of potos. I was under the impression that it's all processed and stitched together in-flight, is this correct and if so what do I need to do?

Yes its normally stitched. You can use Microsoft ICE to stitch the files to save them.
