You can for sure.
My only issue with flying is that the sensitivity of the controls can't be altered.
So it is very immediate.

Nope.
Unfortunately they left that out for the M2.
At least, not that I'm aware off

I wonder if this is missing from the Fly App or just the Mini 2.   Can the Air 2 be adjusted?

A quick search leads to the conclusion they don't have that yet.

That is my finding too.
Looks like they forgot to implement this part of the switch.

There are 2 things on my list that would make the M2 close to perfect (for its pricepoint)
1. Flat(ter) profile / or profile settings.
2. EXP / GAIN settings (or a preset that sets the sensitivity lower)
