Hi!
Is it possible to create custom altitude geo-zones to have the drone avoid known obstacles in your area?  Alternatively, is it possible to set a altitude 'floor' for the drone for a particular mission unless it is manually overidden or RTHing?

Nope and Nope,  best you can do it pre plan the flight in a tool like Litchi.
