I flew my Mavic Pro in Guadeloupe to make a movie at the Arlet's waterfall.
I had an alert at 30 meters height saying I was at the maximum altitude, so I couldn't fly on top the waterfall

Were you in a location where most of the sky (and satellites) was blocked by cliffs etc?
The most likely explanation for the incident is on p53 of your manual.
Height is restricted to 16 feet (5 meters) when the GPS signal is weak and Downward Vision System is activated. Height is restricted to 98 feet (30 meters) when the GPS signal is weak and Downward Vision System is inactivated

Thanks, obviously it was the problem as my drone stopped climbing exactly at 30m height

There's no way around the limitation.
If GPS is not good, you can't fly higher than 30 metres above the launch point.
If you can launch from somewhere higher, that will help
