I have a trip in December to go skiing and I was curious if anyone has used their Osmo Action for skiing and what settings worked best/tips and tricks? I like high frames and I was thinking that 2.7k60 with RockSteady seems to be the best but are their any settings I should tweak with that?

With or without ND-filters?
If it's daylight, then it will be really bright outside with the light reflection from snow.
I haven't been skiing, but when I record outside at winter in daylight I use ND32 filter on mine to get right exposure (4K @ 60 fps, 120 shutterspeed) and auto ISO.

No filter, use Auto.
