While I use the Mavic 3 to demonstrate these settings, the same thing will apply to ANY camera.

If I change only one of the exposure variables (ISO, aperture or shutter speed) from auto to manual and make some adjustment, will the other two variables left in auto compensate for the change and keep the exposure correct.  For instance, if I manually change the aperture from 2.8 to say 5.6 to increase depth of field but leave the ISO and shutter speed on auto, is the camera going to either automatically increase the ISO or decrease the shutter speed to compensate for the tighter aperture to keep the exposure correct?

That it correct, you can have some on auto and some in manual and it will adjust.
