Is it possible to use a single RC-N1 remote controller for both an Air 2S and a Mavic 3 (not at the same time, obviously)? How easy would it be to switch back and forth - or would the remote automatically connects to whichever drone is on? It seems to me some pairing step is needed everytime you want to switch. Can someone confirm and/or explain the process?

Yes it can, you will need to pair it each time with the drone from the fly app

The RC-N1 Remote controllers are interchangeable between DJI Air2s and Mavic 3, but their firmware version is not the same.
To use the remote controller with different products, power on the remote controller and connect DJI Fly app. Enter the connection interface and select the corresponding product mode. The app will prompt a firmware update or product model switching warning, and then perform the following app instructions.

When the thread was started, Nov 2021, was binding available?
If binding is not applicable it is possible to swap the controller from one drone to another is a few seconds especially if you trigger the controller's pairing phase via the button sequence rather that via the app.
