I just got an Oculus Quest 2 VR headset.  It is absolutely amazing.  
I would like to fly my Mavic Air 2 while viewing it though the headset.  I know it won't be 3D, but the clarity will be amazing.  
I have an iPhone12 and the app claimes to see the Oculus, but the Oculus does not mirror the iPhone.  
Obviously I will be away from WiFi, so only bluetooth would work.  

Any advice is welcome!

I don't believe what you are asking is possible with Quest 2, however you can take some 360 panoramas with the drone, upload them to the headset, and then have a look around.  I enjoy doing that.
