I recently replaced a motor as it had gone tight,But now the phantom flys fine but twitches abit sometimes when hovering.Also the same motor will idle when landed but then start to spin up faster than the rest when sat there.Do you think I need to change the esc as I don't know why the motor went tight as it was like that when I bought phantom from a friend.

Having the old motor freeze up on you might have done some damage to the esc board by over heating it.  Electronics are finicky sometimes.  Had that happened to me, I would have changed the board also.  Just my opinion.

Changed esc no spinning up now but still abit twitchy while hovering.Do you think I need to turn gains down.I haven't touched them so they are on default at the moment.

And yes decrease by 5% each time until your happy.

basic pitch 125% roll 125% yaw 120% vertical 140%
attitude pitch 260% roll 260%
