Can the Matrice 30t be used for mapping?

Any drone can.   Set the gimbal to -90 and take over lapping images.  Then stitch in the program if your choice.  

How accurate can the M30t’s system get? What mapping jobs will it work for and what jobs will be too much for it to handle? How does it compare with other RTK drones like the P4 RTK? Can adding control points help?

The Matrice 30t would be next to useless for mapping.
It doesn't have a suitable camera.
As well as that it's big, heavy and expensive.
If you are really interested in mapping, get a Phantom 4 pro v2

Users can plan a flight path and capture photos in the aerial FPV mode of the DJI Pilot 2.0 App, but the model's accuracy is not guaranteed. You may also want to check the FlightHub 2 software as this supports other mapping features. Thank you for your valued support.

If you need accuracy, chances are you could buy professional maps cheaper in long run than cost of M30 and DIY time involved.  Along with setup of GPS surveyed ground markers for reference points, and a marked ground grid for camera to image corrections.

So get a good mapping drone.
The Phantom 4 pro is the industry leading drone for mapping.
You get very good results without the expense of RTK and if you need to tie the altitudes to local map datum, ground control points will take care of that, resulting in very good accuracy.

You should try the drone deploy trial for 7 days with the M2P. You may find it does everything you want.   They specialise in construction sites.

It's a very expensive and very heavy specialised drone, that's definitely not suitable for what most flyers want to do with a drone.
Other drones are much better suited and at a fraction of the price.
