Dumb question, when not flying is there any way to move the gimble left to right, i can move up and down using the scroll wheel, but for the life of me cant move it left or right.

Not on the Mini3.  Other drones like the Mavic 2 Pro do support that though.

Isn't it possible by tapping on the screen, hold and move left or right like on other drones ?

Do ANY of the fly app using drones offer commanded camera yaw? The Mavic Mini and Mini 2 do not and even if they did their yaw range is rather limited.
Both the mavic 2 pro and Zoom do but they use Go4. From memory they can yaw through more than ± 90deg, which is quite handy, especially if you want to look sideways during an RTH thought I'd prefer to be able to yaw the drone, Mavic Mini, style.

The gimbal doesn't physicaly have the travel in it for that to work.  And you'd see the side of the drone if you did I think.

My air2s can yaw my holding on the screen and swiping side to side.
