I am following the prompts on the phone to connect to my DJI Mini SE. When I get t the screen to Link with the aircraft, I have connected the mobile to the RC but it the option to Link with the aircraft remains greyed out.

Hi there. Thank you for reaching out and we're sorry for the trouble. May I know what specific drone are you having issues with? Please download the DJI Assistant 2 software and update/refresh the firmware of both the aircraft and the remote controller then check if the issue persists. Please keep us posted.

The app to update the drone does not recognize the drone

So many have the problem and the solution is always the same "no solution". You sell bad quality that is useless after one or two years so you need to buy a new one.
