I was doing 100+ km's with a normal bike before - so 60 with an e-bike is no problem, But my knees were signaling nevertheless

I understand that but I don't have all the beautiful trails that you do.  Good news is they have dedicated bike lanes to make it safer to ride in most of the suburbs.
