I am asking for your opinion on what is the cause of this uncontrollable crash.
There is no pilot error.
We are not able to figure out the cause of this crash.
We assume that the thrust is lost in the sunroof, but there are still uncertainties here...

For help interpreting the data you can post a link for the report here.   Or just post the .txt file.

There are members here who can review the data give an explanation as to why the incident occurred.

That csv file is not flight data and has nothing that helps understand your incident.
It just has information about each photo you shot during the flight.

I've never used or seen the FPV, but if its app is like the ones that other DJI drones use, you might be able to work it out from the instructions that work for them.

On the left side is glass, and the drone took off from the metal part of the roof. But it's possible that the proximity sensor slowed the engines... but also that the thrust went through the open sunroof...
I flew in N mode, and it's impossible to fall, unless I'm drunk

The CSV file you posted isn't recorded flight data.
You are looking for a .txt file ... not a CSV file.

And launching from a steel surface like a car roof is asking for trouble with a yaw error causing uncontrollable flight.
The theory about the sunroof affecting thrust is implausible.

In summary the FPV's Flight Controller thought the FPV was ascending when in fact it wasn't. This caused the FC compensate by commanding the FPV to descend.

There is good agreement between the ultrasonic height (green) and the video at 1) the first bump with the car roof, 2) the increase in ultrasonic height when the FPV moves from being over the car roof, and 3) the second bump with the asphalt. Also seen is the steady increase of the FC height (red) to about 10.7 meters which is not seen in the video.

The FC height is the result of a fusion algorithm that depends on the accelerometer, barometric, GPS receiver and ultrasonic height data. These data can be found in the .DAT log file if it can be retrieved. Look in the FlightRecords/MCDatFlightRecords for a file with the name  FLYxxx-050-20220xxxxxxx.DAT.

The video claims the "even though the pilot is holding the up stick the whole time". The log actually shows only partial throttle application. 2022-08-10_7-29-12.jpg

After about  12 secs the difference between the ultrasonic and FC heights seems to have resolved.

It's possible that this incident could have been avoided if the throttle were held full positive in the first 12 secs.  The FPV would have remained air born until the ultrasonic and FC height difference was resolved.

I just have to mention that I held the throttle the whole time, until the moment it bounced off the asphalt, and then I wanted to lower it, but even then the drone did not respond to my commands.
I know that the flight data shows that there was no throttle, but I know that, almost in a panic, I held the throttle.
However, even if I didn't hold the throttle, the drone needed to hover, but it didn't, it even fell.
All of this happened beyond my control.

I have had three crashes were it felt like someone else was flying. I think it is RF interference. I am in the middle of nowhere though so I don't know where it is coming from. I turn my phone off but I have no idea if that helps. I haven't wrecked since though.

I understand, but then it's obviously some kind of communication error between the RC and the drone.
At the beginning, you can hear the oscillations of the engine sound, although at those moments it is unquestionable that I was holding the throttle.
Also, it is unquestionable that I held the Throttle the entire time, but the drone was out of my control.
Such situations can be dangerous for other people's lives.
I am thinking of activating the warranty on the device, because I have no confidence in this drone.
