The quality of the 4k 30p video is great. But did anyone else notice that at 60p it is not really 4k?
The sharpness is significant less than at 30p. It looks more like 2.7k upscaled to 4k.
Did anyone else notice this?

If you are using 'high qualty' mode, try 'battery saver' instead.  Also ensure that you haven't inadvertently used the zoom function.  And avoid HDR mode.  I am pretty sure your question has been asked and answered before, but good luck finding it...

Think I need to do a test on this since I mostly shoot in 60 fps.

The difference of quality between the two fps it's very different... the same thing happens with my wife's iPhone 12... 30 fps perfect crisp image, 60fps not so much. I don't know if it's because of the bitrate or if it's upscaled...
