I have recently started using my new DJI Mini 3 Pro. I am a photographer and usually use RAW files.  I have selected the option jpg + Raw on my drone. However when I enter the card from my drone to the PC in order to view my files, its only jpgs. I am using the mac operating system which also can view raw files from Nikon (although it cannot open them) and also lightroom which is supposed to be able to view everything.

What is the matter? How can I shot in RAW?

You need specialsed software to read the dng file format.
Without such software, your computer won't show you the .dng files.
If you don't have such software, you probably don't really need to shoot raw

They have Lightroom, surely this should be specialised enough?

I have such Software. I have Adobe Lightroom. I can see my Raw from my Nikon over there. Furthermore, I should be able to see the files on my file manager (see them not open them anyway). It appears that there are not raw files to start with.

So no DNG full stop? then you need to make sure the camera is set to  JPG+RAW

I've heard this complaint before.
Try a different file manager.
I bet the dng files are in there but the software you are using isn't showing them.

Mac and Lightroom user here,  MacOS has no issue showing DNGs and their previews,  if you dont see the DNG files on the SD card then I would reinstall the fly app and toggle back on the Jpg+raw option as it sounds like the drone hasn't had the setting take effect.
