I'm having trouble viewing the camera, starting the drone, and finding the flight controller number on the GSP app.

Push My Missions then camera view will be available. S/N will be in drone settings (right upper corner of camera view)

Sorry, i wrote big bull.... I gave you the procedure with UGCS. With GSPro you simply push on the drone name. In the first picture you uploaded "P4 GH". if you push on that the identification number should appear. If it is for the DGAC certification, the serial number of the drone is written in the battery compartement. Also on a sticker included in the original package.
