Not quite sure what you are seeing wrong though I haven't checked exif to see what it's doing.
In manual mode you can change the shutter speed as well as lock ISO in a range, or set one value.
The EV is then showing the outcome of your settings rather than being something you would want to adjust
When adjusting shutter and ISO it appears to do whst I would expect but haven't really used photos mode beyond a couple of test shots |
