Bear meat is strong flavored and a little fatty so I usually parboil it first to remove the excess fat. After that I add it to a stew and cook it over very low heat for hours. I’ve also cooked it in a slow cooker. Cooking it slowly tends to eliminate the gamey taste and ensures the meat is tenderized.
I’ve also prepared it as a roast. I usually marinate it overnight in my own personal made-up mixture. I use soy sauce, honey, peanut oil, lemon juice, curry powder, chili powder, chopped onion, a garlic clove and salt and pepper. Sometimes I add a shot of red wine. Marinading helps soften the meat fibers. Then I cook it in a covered dish in the oven at a very low heat. When the internal meat temperature reaches 75 C it’s ready to come out of the oven.
OK so a bit like how we would cook a brisket here (if not BBQ). Our of interest can you get gator there, I see recipes for it on occasion. We sometimes get Kangaroo here, but as you know we dont have any wild ones. |
