Hey, I can't manage to store 48MP Jpegs when taking color pictures. The  drone always stores 12MP (4.000 x 3.000Px) JPG images.

How can I switch the format to 48MP?

Be in "wide" camera view and then select the 8k photo resolution. Use the SMART option to get better pictures anyway. The 48mp (8,000x6,000) thing is a marketing gimmick & will NOT net you better JPG pictures.
