Max Rate is the most important value, it defines the maximum rotational speed on the yaw, roll and pitch axes... practically how fast the drone rotates at full stick deflection.

If you want to fly smooth cinematic stuff 600 deg/s is totally unnecessary and you loose "stick resolution". A lower Max Rate gives you more "stick resolution" and you have more control over all the stick deflection.

Center Sensitivity is personal. If you want a more linear transition from the center to the full stick deflection (Max Rate) higher value is better (100 or 200) and maybe you can add some Expo to smooth the transition.
