I learned this about Bison meat from a nutritionist.

Bison do need a lot of open space to graze on.  Some of the online guides say you need 4-5 acres per bison.

Usually, they move slowly and just kindof amble along. When they move fast, they can be trouble!

They are fenced into a VAST area. 45,000 acres (180 km2)

Yes, Bison is quite tasty and there are ranches that raise them for meat.

I've never had bear or elk.

I've found bear meat to taste slightly gamey like venison but sweeter and shares a similar texture with pork.  Elk meat has a relatively mild taste with a slight hint of sweetness.  Compared to many other wild game types of meat, elk meat doesn't have an overly gamey taste. Of course, we all have different taste buds so you may or may not like bear or elk.  It's expensive so I only buy it on special occasions.
