Experiences with the DJI mini 3 Pro in winter conditions...
There were no problems with the batteries, they worked as usual even though it was quite cold. However, my propellers froze several times and I received a "motor overload" warning and the drone landed on the roof of the car and once in the snow. I never had such problems with the Mavic pro. Basically, if you fly in temperatures lower than -5 and in snow, do not fly further than approx. 20m and consider that you may have to land due to engine overload. Peace!

Nice video ! Just for my info: I usually come to Croatia for summer vacations and, based on the researches I did, it seems that drones are allowed to fly following the EU regulation, but aerial shots require an approval (and usually recreational videos are not approved). Is this true ? On last summer I avoided to take aerial shots for that reason... But if I'm wrong, next summer I'll do.

I don't know how it is for foreigners and tourists. But yes, in order to fly and film anything you need to have a passed pilot license, and a small business/firm, report the flying in advance, and report the video after. We live in the most idiotic and corrupt country in the world, so basically if you have a camera on your drone it is nearly impossible to film anything.
